Step 1
Add one tablespoon of vanilla sugar into the milk and let it simmer at low heat. At the same time whisk the egg whites into a thick foam, add 2 tablespoons of sugar and whisk until the sugar has melted.
Step 2
Dip a spoon in the milk and then make egg-white dumplings. Cook them for a short time at low heat and transfer them to a bowl or separate small bowls with a slotted spoon.
Step 3
As they are cooking, baste them with surrounding milk so they are evenly done. Whisk the egg yolks and the remaining sugar in a bowl, add hot milk used to cook the dumplings, return this mixture into the dish and cook a custard cream.
Step 4
Pour the custard over the dumplings.
