Ingredients (for four servings)
1 package of crumbled firm tofu
1-2 teaspoon ground cumin
1 diced zucchini
1 bell diced pepper
1 diced onion
½ cup nutritional yeast
2 teaspoon tamari
2 teaspoon extra-virgin olive oil
Preparation
Mix first tofu, cumin, yeast and tamari with a fork. In a heavy skillet, combine pepper, zucchini, onion and olive oil. Sauté for 5 minutes. Stir in tofu mix and cook for another 10 minutes before serving.
