Step 1
Cut the potatoes into large pieces and boil them until soft. Sauté the onions, add the bell peppers and cook until soft.
Step 2
Drain the potatoes, place them on a prepared baking sheet and add the onion mixture, garlic, onion powder and herbs.
Step 3
Bake in a preheated oven at 375 F for 45 minutes until crispy and golden. Serve.
